A delightful dessert that combines chocolate and peanut butter in a stunning cake roll.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/2 cup peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 cup chopped peanut butter cups
  • 1/2 cup chocolate ganache (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, mix flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until light and fluffy.
  4. Add vanilla and milk to the egg mixture. Gradually mix in dry ingredients until combined.
  5. Pour the batter into the prepared pan, spreading it evenly.
  6. Bake for 15-18 minutes.
  7. While still warm, invert the cake onto a towel dusted with powdered sugar.
  8. Roll the cake with the towel and let it cool.
  9. For the filling, mix peanut butter and powdered sugar until smooth.
  10. Unroll the cooled cake and spread the peanut butter filling evenly.
  11. Re-roll the cake without the towel.
  12. Chill for 30 minutes.
  13. Top with chocolate ganache and chopped peanut butter cups before serving.

Notes

Dust the towel with powdered sugar to prevent sticking. Use creamy peanut butter for a smooth filling.
