  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup baby spinach
  • Fresh parsley for garnish

Instructions

  1. Combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper in a bowl. Mix well and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until softened.
  3. Add the chicken broth and bring to a boil.
  4. Drop in the meatballs and simmer until they are cooked through, about 10-15 minutes.
  5. Stir in the baby spinach and cook until wilted.
  6. Serve hot, garnished with fresh parsley.
