Cheesy Ground Turkey Casserole

A delicious one-pot casserole packed with protein from ground turkey and fiber from veggies, topped with melted cheese.

Ingredients

  • 1 lb ground turkey
  • 1 cup cooked pasta (elbow macaroni or penne)
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 can diced tomatoes (14.5 oz)
  • 1 can corn (15 oz, drained)
  • 1 packet taco seasoning
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onions and bell peppers and sauté until softened.
  3. Add ground turkey and cook until browned. Drain excess fat.
  4. Stir in the taco seasoning, diced tomatoes, and corn.
  5. Mix in the cooked pasta and half of the cheese.
  6. Transfer the mixture to a casserole dish and top with the remaining cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Serve warm.

Notes

For added flavor, serve with fresh herbs, hot sauce, or alongside a green salad.
