A quick and easy one-pot meal featuring tender chicken, vibrant broccoli, and creamy cheese, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  2. Add the broccoli florets to the skillet and cook for an additional 3 minutes.
  3. Stir in the orzo and chicken broth. Bring the mixture to a boil, then reduce the heat to low and cover. Cook for about 10 minutes or until the orzo is tender and the liquid is mostly absorbed.
  4. Remove from heat and stir in the shredded cheddar cheese until it is melted and creamy. Serve immediately.

Notes

For added flavor, marinate the chicken in herbs and spices before cooking. Frozen broccoli can be used if fresh isn’t available.
