  • 3 lbs bone-in, skin-on chicken thighs (about 68 thighs)
  • 1/2 cup dark brown sugar (packed)
  • 3 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper (freshly ground)
  • 1 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
  2. Pat the chicken thighs completely dry with paper towels and arrange them in a single layer in the prepared baking dish.
  3. Whisk together the dark brown sugar, Dijon mustard, apple cider vinegar, soy sauce, garlic powder, smoked paprika, and black pepper until smooth.
  4. Pour the mixture evenly over the chicken thighs, ensuring each piece is coated.
  5. Bake for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the glaze is bubbly.
  6. Broil for the last 2-3 minutes for extra crispy skin, watching carefully.
  7. Remove from oven and let rest for 5 minutes. Spoon extra glaze over the chicken and garnish with parsley before serving.
