A delightful twist on a traditional quesadilla, combining sweet blueberries with creamy cheese wrapped in a crispy tortilla.

Ingredients

  • 2 flour tortillas
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • Cooking spray or butter for frying

Instructions

  1. Mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly over one tortilla, then sprinkle the blueberries on top.
  3. Place the second tortilla on top and press down gently.
  4. Heat a skillet over medium heat and add a little cooking spray or butter.
  5. Cook the quesadilla for about 2-3 minutes on each side until golden brown and the filling is heated through.
  6. Remove from the skillet, slice into wedges, and serve warm.

Notes

Serve warm with a drizzle of honey or maple syrup. Store leftovers in an airtight container in the refrigerator for up to two days.
