Autumn Pasta with Sausage and Butternut Squash

A cozy autumn dish featuring sausage, butternut squash, and Brussels sprouts tossed with pasta for a hearty and comforting meal.

Ingredients

  • 3 cups butternut squash, peeled, seeded, and cubed
  • 12 oz Brussels sprouts, halved
  • 8 oz bow tie pasta
  • 12 oz cooked smoked beef or poultry sausage, sliced into rounds
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 3 tablespoons olive oil (divided)
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400 F. Toss the cubed butternut squash with 1 tablespoon olive oil, salt, and pepper. Arrange it on a parchment-lined baking sheet in a single layer. Repeat for the Brussels sprouts on another sheet or the same one if it is large enough. Roast the butternut squash for 15 to 20 minutes and the Brussels sprouts for up to 30 minutes until tender and caramelized.
  2. Bring a large pot of salted water to a rolling boil. Add the bow tie pasta and cook according to the package directions until al dente. Drain the water and set the pasta aside.
  3. Heat the remaining 2 tablespoons of olive oil in a large, high-sided cast-iron skillet over medium heat. Slice your smoked sausage into coins. Add them to the skillet and cook for 5 minutes per side until nicely browned. Remove the sausage coins and set them aside.
  4. Add the minced garlic to the same skillet and cook for 1 to 2 minutes until fragrant. Add the butter and let it melt. Toss in the cooked pasta, coating every piece in the garlic butter. Sprinkle with salt, pepper, and a pinch of smoked paprika.
  5. Add the roasted butternut squash, Brussels sprouts, and seared sausage coins back into the skillet. Toss gently to combine all ingredients. Garnish with fresh snipped thyme and serve immediately.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave until warmed through.
